Hong Kong Egg Sandwich

Ingredients

  • 4 Slices of Hovis® Soft White bread (crusts removed and lightly toasted)
  • 2 Tbsp unsalted butter
  • 4 Slices of Spam (about 6mm thick)
  • 2 Tbsp milk
  • ½ Tsp Cornstarch
  • Pinch of salt
  • 3 Large eggs
  • ½ Tbsp vegetable oil

Tip

If you're not a fan of spam, just swap it for gammon!

Cut crusts off bread and toast slices then spread a thin layer of butter on one side of each piece of lightly toasted bread. Set aside. (You can keep the crusts and use them to make croutons or try adding them to our Tuscan-style Ribollita)

Heat a frying pan over medium heat. Cook the Spam slices until golden brown on one side (about 2 minutes), then flip and cook the other side until browned. Remove from the pan and place 2 slices of Spam on each of 2 bread slices. Wipe pan clean with kitchen roll.

In a bowl, whisk together the milk, cornstarch, and salt until smooth. Crack the eggs into the mixture and whisk until well combined.

In the same pan, add vegetable oil and heat over medium-high until shimmering. Pour in the egg mixture and cook gently, stirring and folding with a spatula to form soft, fluffy scrambled eggs. This should take about 1-2 minutes.

Divide the scrambled eggs over the Spam and top with the remaining slices of bread. Serve immediately for the perfect Hong Kong inspired breakfast or brunch.
