Japanese-Style Strawberry Sando

Ingredients

  • 2 Slices Hovis® Soft White Medium Sliced bread
  • 60g Mascarpone
  • 120ml Heavy cream
  • 1 Tbsp Icing sugar
  • ¼ Tsp Vanilla extract
  • Pinch of salt
  • 5 Strawberries (hulled)

Tip

For some variety, try filling with different soft and sweet fruits like mandarins, mangos, bananas or kiwis.

In a large bowl, mix the mascarpone until smooth (an electric mixer on medium speed will be the easiest way to do this quickly - only about one minute). Next, add the cream, sugar, vanilla and salt. Mix this for about 3-4 minutes just until stiff peaks form.

Spread 3 tablespoons of the cream mixture onto both slices of bread. On one slice, place the 5 whole strawberries (on their sides) in an X pattern. Laying them out like this means they will look the nicest when we cut them later. Carefully place the second cream-covered slice on top and press gently. Wrap the sando tightly in cling film then place in the fridge for at least an hour - the cooler your sandwich, the easier it’ll be to slice. (If you want to remember exactly where to cut it, draw a line on the cling film in the direction that you placed the strawberries in).

When the cream has stiffened in the fridge and you’re ready to serve, use a serrated knife to slice them diagonally. If you want the sandos to look more authentic, you can cut the crusts off (but don’t throw them away - they’ll have cream on them and so be yummy to nibble). Enjoy immediately!
