Bread Pancake Recipe

Out of flour but still craving pancakes? This clever recipe uses bread as a base, turning what you’ve got into a warm breakfast. Perfect for those days when the cupboards are bare, but you still fancy a treat. With a crispy exterior and a soft, pillowy inside, these bread-based pancakes offer a delicious way to indulge your pancake cravings using ingredients you already have in the kitchen.

Preparation time: 5 minutes

Cook time: 3 minutes (per pancake)

Serves 2 (approx 4 pancakes)

Ingredients

  • 4 Slices of Hovis® Soft White Medium Sliced
  • 200ml Milk
  • 2 Medium eggs
  • 3 Tablespoons of sugar
  • 1/4 Teaspoon of baking soda
  • 1 Tablespoon of oil
  • 1 Drop of vanilla extract (optional)

Tip

If cooking in batches, you can cover the pancakes with tin foil to keep them warm while you cook the remaining ones.

Method

Take 4 slices of stale Hovis® Soft White Medium Sliced bread and tear it into rough pieces. Add the bread to a food processor or blender and blend until it’s crumbled.

Next, pour in the milk, sugar, baking powder, vanilla extract, and a small pinch of salt. Blend for a few seconds and then add the eggs. Blend until all the ingredients are fully mixed into a runny batter.

Heat a little oil in a frying pan over medium heat. Once the oil is hot, pour in a portion of the batter, working in batches. Cook the pancakes for about 3 minutes, or until golden brown. Add your favourite toppings and serve while still hot!
