Chicken Soup

Ingredients

  • 2 Slices of Hovis® Rustic White Bloomer
  • 2 Tablespoons of extra Virgin Oil
  • 4 Medium carrots (peeled and diced)
  • 3 Parsnips (peeled and sliced)
  • 3 Celery sticks (sliced)
  • ½ Medium onion (diced)
  • 1 Leek (sliced)
  • 4 Garlic cloves (crushed)
  • Salt & Ground black pepper
  • 2 Boneless skinless chicken breasts
  • 2 Sprigs fresh thyme
  • 1 Bay leaf
  • 1L Chicken broth
  • Fresh parsley

Tip

Quickly sear the chicken in a frying pan before poaching it for extra flavour.

Method

Heat a large pot with olive oil and sauté carrots, parsnips, celery, leek, and onion for approximately 4-5 minutes. Stir in the garlic, salt, and pepper, and cook for another minute.

Poach the chicken, adding thyme, bay leaf and stock. Bring to a boil, then lower the heat. Cover the pot, and simmer for 15 minutes, or until the chicken is cooked through.

Remove the chicken from the soup, then shred it with two forks. Return the shredded chicken to the pot and simmer for an additional 1-2 minutes. Butter your Hovis® Rustic White Bloomer, sprinkle some parsley on top, and enjoy!
