Carrot & Coriander Soup

A delicious, simple soup packed full of flavour. Enjoy its vibrant taste of sweet carrots and fresh coriander, topped with home-made croutons!

Ingredients

  • 2 Slices of Hovis® Granary® Wholemeal
  • 2 Tablespoons of olive oil
  • 4 Garlic cloves (crushed)
  • 1 Red onion (roughly chopped)
  • 1 Teaspoon of dried coriander
  • 1kg Carrots (roughly chopped)
  • 1L Vegetable broth
  • 1 Handful of fresh coriander (chopped)
  • Salt & Ground black pepper

Heat a large pot with olive oil and sauté the garlic, onion, carrots and dried coriander for approximately 3-4 minutes.

Pour in the vegetable stock and allow it to simmer for 20 minutes, or until the carrots are tender. After 20 minutes, take it off the heat and stir in your fresh coriander.

Once cooled, add the soup to a blender and blend until your desired texture. Cut Hovis® Granary® Wholemeal into small squares, add them to a bowl. Drizzle some olive oil, salt and pepper to taste to the bread and toast it in a frying pan. Add your homemade croutons to your soup, and enjoy!
