To cook, coat the king prawns in the sweet chilli sauce with the olive oil. Heat a frying pan to a high heat and fry the prawns gently for 2-3 minutes or until they are pink and cooked through.
Meanwhile, butter 2 slices of HovisⓇ Seeded Batch bread and then layer up the prawns. Then cut the avocado in half, remove the pit and cut into square pieces (be careful not to cut your hands as you slice!). Use a spoon to scoop out the avocado and place on top of the prawns.
Drizzle any leftover chilli sauce over each sandwich and then top with the rocket leaves and the other slice of bread. Cut in half and serve immediately.
