Courgette Sandwich Recipe

A vibrant medley of fresh ingredients packed between two slices of Hovis® Tasty Wholemeal. The courgette, thickly sliced and tender, pairs beautifully with crisp lettuce, sweet onion, and melting mozzarella. Ingredients

  • 2 Slices of Hovis® Tasty Wholemeal Medium Sliced
  • 1 Courgette thickly sliced
  • 2 Lettuce leaves
  • 1 Half an onion (sliced into strips)
  • 100g Mozzarella cheese
  • 2 Teaspoon of mayonnaise
  • 1 Teaspoon of oil
  • ½ Tablespoon of butter
  • Salt and black ground pepper

Tip

Avoid overcrowding the pan to ensure the courgettes cook evenly and brown nicely, rather than steaming and becoming mushy. You can also swap mozzarella for cheddar cheese!

Method

Slice the courgette into thick, angled pieces about 1 centimetre wide. Heat some oil in a frying pan and cook the courgette slices for 3 minutes on each side. Once the courgette is tender but still firm. Fry the onions, then, remove from the pan and set aside.

Butter the frying pan and toast the slices of Hovis® Tasty Wholemeal Medium Sliced bread until golden brown. While the bread is toasting, slice the cheese. Once the bread is toasted, flip it over, place the cheese on the toasted side, then cover the pan and cook until the cheese has melted.

Once the cheese has melted, place the slices on a plate. On one slice, spread a layer of mayonnaise, then top with the sliced courgettes, onions and two lettuce leaves. Season with salt and pepper to taste, then enjoy!
