Golden breadcrumbs crown this rustic ratatouille, adding a savoury crunch to the medley of vegetables beneath. Juicy courgettes, sweet peppers, and tender tomatoes meld together in a herby tomato sauce, while the toasted crust invites you to relish each flavour-packed bite.

Preheat the oven to 190°C/170°C fan/gas 5. Toss the crumbed Hovis® Soft White bread with 2 tbsp olive oil and a pinch of seasoning in a small bowl. Set this aside.
In a large bowl, add courgettes, peppers, onion, tomatoes, garlic, thyme, tomato purée, white wine vinegar, and the rest of the olive oil. Season, toss well, and transfer the mixture into a roasting tin. Cover with foil and bake for 20 minutes.
After 20 minutes, remove the foil and sprinkle the breadcrumbs over the vegetables. Bake for an additional 10 minutes. Once it’s golden, remove from the oven and finish with a sprinkle of lemon zest. Serve and enjoy.
