  • 2 Slices of Hovis® Soft White Medium Sliced (crumbed)
  • 3 Tablespoons of extra virgin olive oil
  • 3 Courgettes (thickly sliced)
  • 1 Red pepper (cut into chunks)
  • 1 Yellow pepper (cut into chunks)
  • 1 Large onion (very roughly chopped)
  • 4 Ripe plum tomatoes (cut into chunks)
  • 2 Garlic cloves (sliced)
  • 1 Tablespoons of chopped thyme
  • 1 Tablespoons of tomato purée
  • 2 Tablespoons of white wine vinegar
  • Zest of 1 lemon

Preheat the oven to 190°C/170°C fan/gas 5. Toss the crumbed Hovis® Soft White bread with 2 tbsp olive oil and a pinch of seasoning in a small bowl. Set this aside.

In a large bowl, add courgettes, peppers, onion, tomatoes, garlic, thyme, tomato purée, white wine vinegar, and the rest of the olive oil. Season, toss well, and transfer the mixture into a roasting tin. Cover with foil and bake for 20 minutes.

After 20 minutes, remove the foil and sprinkle the breadcrumbs over the vegetables. Bake for an additional 10 minutes. Once it’s golden, remove from the oven and finish with a sprinkle of lemon zest. Serve and enjoy.
