Grilled Halloumi Sandwich

Ingredients

  • 4 Slices of Hovis® Granary® 400g
  • 2 Tablespoons of light mayonnaise
  • 250g Halloumi (thickly sliced)
  • 1 Red pepper
  • 1 Romaine lettuce (washed and leaves separated)
  • 1 Onion
  • 1 Cucumber

Tip

Slice the halloumi into thick, even slices to ensure it grills well without falling apart.

Thinly slice the red pepper, romain lettuce, onion and cucumber.

Heat a griddle pan until very hot and add the halloumi slices, cooking for 1 minute on each side before turning, making sure they have dark charred lines.

To build the sandwich, spread each slice of bread with mayonnaise, and then top with halloumi followed by the lettuce, onion and pepper. Place the final slice of bread on top and cut in half. Serve immediately.
