Cheese on Toast with Pesto & Grilled Tomatoes

Ingredients

  • 2 Slices of Hovis® Granary® Medium Sliced
  • 150g Mature cheddar (thickly sliced)
  • 200g Vine Cherry tomatoes
  • And for the pesto:
  • - 1 Garlic clove
  • - 25g Parmesan
  • - 25g Pine nuts
  • - 50g Fresh basil
  • - 40ml Extra Virgin Olive oil

Tip

Lemon helps balance the flavour of the olive oil in the pesto, and adds a delightful extra zing!

To make the pesto blitz the garlic and parmesan in a food processor to break them up. Add the pine nuts and basil, and whizz briefly until roughly chopped. Drizzle in the olive oil with a little salt, and pulse until just combined.

Grill the tomatoes on medium heat for 8-10 minutes or until softened. Meanwhile, grill the Hovis® Granary® Medium Sliced bread on one side. Turn the bread over, lay the cheese on top, and grill for 2-3 minutes or until the cheese is melted and golden.

Remove the grilled bread with melted cheese from the grill. Drizzle 2-3 tbsp of pesto over the cheese, and serve alongside the grilled tomatoes.
