Mozzarella, Tomato & Basil Pizza Toast

A classic Mozzarella, Tomato, and Basil salad...but make it Pizza Toast! With melted mozzarella and fresh tomato slices, enhanced by aromatic basil pesto. An open sandwich perfectly toasted to golden crisp, it’s a taste of simple elegance.

Ingredients

  • 2 Slices of Hovis® Farmhouse Soft White
  • 1 Tablespoon of butter (softened)
  • 6 Cherry tomatoes (sliced in half)
  • 1 Mozzarella ball (drained)
  • 2 Tablespoons of tomato pesto
  • A few leaves of fresh basil
  • Salt & Ground black pepper

Tip

You can also add a touch of dried oregano or a drizzle of balsamic glaze for extra depth of flavour.

Method

Spread 1 tablespoon of butter on one side of bread. Place one slice, butter-side down, in a medium heat frying pan. Cook for 3-4 minutes until golden and crisp, pressing with a spatula. Repeat with the remaining slice.

Lay all two slices of bread, toasted-side up, on a board. Spread tomato pesto on each slice. Then add cherry tomatoes, mozzarella slices and then add seasoning with sea salt and ground black pepper to taste.

Heat the pan and place the bread in it. Cover with a lid and cook for 3-5 minutes, or until the bread is golden and crisp and the mozzarella is melted. Sprinkle fresh basil leaves on top and serve with extra pesto for dipping.
