Avocado, Tomato, Basil & Burrata Sandwich

With each bite of this sandwich, the silky burrata melds with luscious avocado and juicy tomatoes, all nestled in crisp, golden bread. The perfect addition to any picnic, each mouthful becomes a blissful celebration of summer’s finest, vibrant flavours.

Ingredients

  • 2 Slices of Hovis® Rustic seeded Bloomer
  • 1 Avocado
  • 1 Burrata Cheese or Mozzarella
  • Fresh Basil leaves
  • 1 Big tomato
  • Salt & Ground black pepper
  • Olive Oil
  • Butter

Tip

Place fresh basil leaves on the burrata and drizzle with balsamic glaze for sweetness and acidity.

Method

Toast 2 slices of Hovis® Rustic Seeded Bloomer and spread a light layer of butter on either side. Cut one ripe avocado in half and slice one half into long strips. Place these across one slice of toast. Then add some fresh basil leaves on top before slicing your big tomatoes up. Add two pieces of sliced tomatoes on top of the basil leaves.

Time for the burrata cheese! The burrata can be swapped for mozzarella if isn't available at your local supermarket. Drain the burrata (or mozzarella) in a small strainer and then add either the whole thing or cut it in half, depending on how much you would like. The second half can be used for a second sandwich. This should now ooze nicely as you place on top. Now add a sprinkle of salt and pepper before finally adding a drizzle of olive oil.
