Cut the cucumber into thin, round slices. For a twist, add some lemon and dill into the recipe. Simply mix ½ teaspoon of lemon zest and 1 teaspoon of lemon juice into the cream cheese mixture.
Evenly spread about a tablespoon of cream cheese on each slice of bread. Layer the cucumber slices neatly on one slice of bread and season with a pinch of salt and freshly ground black pepper.
Top with the remaining slice of bread to form a sandwich. Press gently to ensure it holds together. For a traditional style, cut the crusts of as well. (You can keep the crusts in the freezer and use for croutons at a later date.) Slice the sandwich in half and enjoy!
