Cucumber Sandwich

Fresh cucumber slices layered with cream cheese on bread, seasoned with a touch of salt and pepper for a light and quick sandwich.

Ingredients

  • 2 Slices of Hovis® Seeded Batch
  • 1 Handful of dill
  • ½ Cucumber (thinly sliced)
  • 3 Tablespoons of cream cheese
  • ½ Teaspoon of lemon zest
  • 1 Teaspoon of lemon juice
  • Salt & Ground black pepper

Tip

Add some pickles and lettuce for extra flavour!

Method

Cut the cucumber into thin, round slices. For a twist, add some lemon and dill into the recipe. Simply mix ½ teaspoon of lemon zest and 1 teaspoon of lemon juice into the cream cheese mixture.

Evenly spread about a tablespoon of cream cheese on each slice of bread. Layer the cucumber slices neatly on one slice of bread and season with a pinch of salt and freshly ground black pepper.

Top with the remaining slice of bread to form a sandwich. Press gently to ensure it holds together. For a traditional style, cut the crusts of as well. (You can keep the crusts in the freezer and use for croutons at a later date.) Slice the sandwich in half and enjoy!
