Ingredients

  • 4 Slices of Hovis® Seed Sensations® Original
  • 10g Chives
  • 60g Mayonnaise (or vegan mayo)
  • 10g Tarragon
  • 60g Greek yogurt (or vegan alternative)
  • 1 Lemon
  • 2 Tablespoons of extra virgin olive oil
  • ½ Head of Romaine lettuce
  • ¼ Cucumber (thinly sliced)
  • 1 Avocado (thinly sliced)
  • 225g Fresh mozzarella (thinly sliced)
  • Salt & Ground black pepper

Tip

If you can't find butter lettuce, you can try replacing it with Romaine or Iceburg lettuce

Method

In a blender, combine the chives, mayonnaise, tarragon, yogurt, lemon zest, and juice from half a lemon. Add 2 tablespoons of oil, season with salt and pepper, and purée until smooth.

Squeeze the remaining lemon half over the lettuce and cucumbers, drizzle with oil, season, and toss. Toast the bread, then spread avocado on 2 slices, season, and top with lettuce, cucumber, and mozzarella.

Spread the remaining 2 slices with green goddess dressing, and place on top to complete the sandwich.
