Leftover Sunday Roast Chicken Recipe

Transform leftover chicken into a fresh and flavourful sandwich. Juicy chicken, crisp lettuce, and tangy tomato are layered on toasted Hovis® Soft White Bread, enhanced by a herb-infused mayo. Perfect for a quick and delicious meal.

Ingredients

  • 2 Slices of Hovis® Soft White Medium Sliced
  • 15g Chives
  • 15g Parsley
  • 2 Tablespoons of mayonnaise
  • 400g Leftover chicken
  • 1 Tomato
  • 1 Little gem lettuce
  • 1 Lemon
  • Salt & Ground black pepper

Tip

For added freshness, chill the herb mayo for 10 minutes before assembling your sandwich.

Roughly chop the the chives and parsley.

Grab a mixing bowl and add the mayonnaise and the chopped herbs. Add a big squeeze of lemon, season with salt and pepper and mix.

Get two slices of Hovis® Soft White medium and toast.

Slice up your leftover chicken into bite-sized chunks. Slice the cucumber and tomato, season with salt and pepper. Separate the lettuce leaves.

Time to build. Start with the bottom slice of bread, add a layer of mayonnaise, top with tomato, lettuce, cucumber and chicken. Add another layer of mayonnaise on the other slice of bread and place it on top.
