Chicken & Spicy Pineapple Jam Club Sandwich

How about a deliciously fruity twist on the classic club sandwich? Tender, succulent chicken, vibrant fresh tomatoes, and crisp lettuce are perfectly balanced by a sweet and spicy burst of pineapple chutney, all nestled between slices of hearty wholemeal bread.

Ingredients

  • 4 Slices Hovis® Wholemeal Medium Sliced Bread
  • 200g Roasted chicken (sliced or shredded pieces)
  • 2 Large tomatoes (sliced)
  • 1 Head of little gem lettuce (leaves washed and separated)
  • 1 Tablespoon of mayonnaise
  • For the jam:
  • 100ml Sweet chilli dip
  • 1 Teaspoon chilli flakes
  • 1 Tin (or 150g) of crushed pineapple in juice

Tip

Once you’ve finished cooking the jam, allow allow it to cool to room temperature before transferring any leftovers to an airtight container and placing it in the refrigerator. The jam can last up to a month!

Method

To make the jam, combine the sweet chilli dip, chilli flakes and crushed pineapple with 2 tablespoons of the tinned juice into a saucepan. Heat gently and bring to a simmer. Simmer for 3-4 minutes, stirring occasionally, until the mixture has thickened slightly and the pineapple is soft. Transfer into a bowl and allow to cool completely.

To build one sandwich, spread one piece of Hovis®️ Wholemeal with half the mayonnaise and the other slice of bread with 1 tablespoon of the jam. Layer up the lettuce, tomato slices and chicken and a few leaves of lettuce on the slice with the jam, and then top with the mayonnaise slice.
