Egg Sandwich with Sausage and Red Peppers

Ingredients

  • 225g Sweet Italian sausage (casings removed)
  • 15g Unsalted butter
  • 2 Large eggs
  • Pinch of salt
  • 2 Hovis® Seeded Deli Rolls (toasted)
  • BBQ Sauce (for muffins) 85g
  • Feta cheese (thinly sliced) 80g
  • Sweet red bell peppers (finely sliced)
  • 15g Coriander leaves
  • Mayonnaise (for rolls)

Tip

You can use a normal sausage and de skin to use for the patties. For a different flavour, you can also swap the BBQ sauce for a tangy mustard or add a sprinkle of paprika to the sausage patties.

Method

Shape the sausage into two patties, each about 1 cm thick, using damp hands.

Heat a large cast-iron skillet over medium-high heat. Add the sausage patties and cook until the bottom is golden, about 2 minutes. Flip the patties and cook for an additional 2–3 minutes, until browned and cooked through. Transfer to a plate and wipe the skillet clean.

Melt butter in the same skillet over medium heat. Crack the eggs into the pan and cook undisturbed for 4–5 minutes, until the whites are set and golden around the edges, leaving the yolks runny. Season with salt and remove from heat.

Spread BBQ sauce on the bottom halves of the toasted buns. Layer with feta, sausage patties, eggs, sweet red bell peppers, and cilantro. Spread mayonnaise on the remaining roll halves, then close the sandwiches.
